HOMEBASE RECIPE: GUILT-FREE, LUSCIOUS LAMINGTONS

Hands up if your mouth waters at the mere mention of a freshly baked lamington?

For those of us that possess this insatiable love, it really is no wonder considering the splendid mix of ingredients: layers of light-and-fluffy sponge cake bound together with cream and jam that’s cubed, coated in chocolate sauce and rolled in desiccated coconut.

Introducing our guilt-free luscious lamingtons (nutritious ingredients included – it’s what makes it guilt-free, right?)

Easy and fun to make, the final step is trying not to devour them all at once (like we usually do).



Guilt-Free, Luscious Lamingtons | Makes Approximately 20 Portions

Ingredients | Sponge Cake
75 grams organic plain flour
30 grams corn flour
50 grams rapadura or organic raw sugar
4 organic, free-range eggs
1 tablespoon vanilla bean paste


Ingredients | Chocolate Coating
30 grams raw cacao powder
250 grams rapadura or organic raw sugar (milled)
80 grams desiccated coconut
180 ml boiling water


Method | Sponge Cake

  • Preheat oven to 180°C (350°F)
  • Grease and line a 16cm x 26cm square baking pan with baking paper
  • Place eggs and vanilla bean paste into mixing bowl, beat until light, creamy and four times their original volume
  • While beating, gradually add sugar until fully dissolved
  • Gradually add both plain and corn flours, folding into mixture very gently and until fully combined
  • Pour mixture into baking pan
  • Bake for 20 minutes (or until sponge looks golden) making sure to test with a clean skewer
  • Allow to cool for 5 minutes before removing baking paper and pan
  • Cool on a wire rack
  • Cut into 20 squares

Method | Chocolate Coating

  • Combine raw cacao powder and sugar
  • Add boiling water and mix until sugar is fully dissolved
  • Remove paper, trim edges and carefully cut into 20 uniform squares



Lamington Construction

  • Working one at a time with a skewer, gently dip each square into chocolate coating
  • Sprinkle lightly with desiccated coconut
  • Set aside on a tray until coating has set

Variations

  • Cut sponge cake squares in half, dip into chocolate coating, add a dollop of whipped cream and bring them together
  • You can do the same with your favourite jam
